Indian Bay Leaf (Tejpatta) — the right leaf for Indian cooking
Most packaged “bay leaf” sold in supermarkets is the European Mediterranean bay (Laurus nobilis) — smaller, with a sharper, herbal pine-eucalyptus flavour suited to French and Italian cooking. For Indian dishes, authentic recipes call for Indian bay leaf (Tejpatta), which is Cinnamomum tamala — a larger leaf related to the cinnamon tree, with a warm clove-cinnamon aroma that is irreplaceable in biryani, pulao, and classical masala preparations.
How to identify authentic Indian bay leaf
• Size: Noticeably larger than European bay — 10-15 cm long, 4-6 cm wide.
• Veins: Three prominent parallel veins running lengthwise down the leaf (European bay has a feathered vein pattern).
• Colour: Dull olive-green to pale brown when dried.
• Aroma: Warm clove-cinnamon notes, not the sharp herbal smell of European bay.
How to use in cooking
Biryani/Pulao: 2-3 leaves for 1kg rice, added to the oil during tempering with whole garam masala. Removed before serving.
Dal makhani: 1-2 leaves added during the slow simmer gives the characteristic background depth.
Garam masala: 4-5 leaves dry-roasted and ground into a fresh garam masala blend.
Curries and gravies: 1 leaf per 500ml of gravy, added during the base masala cooking stage.
Storage
Airtight glass jar away from light and heat. Whole leaves retain aroma for 2 years. Ground tejpatta loses flavour within 3-4 months.
Health and traditional uses
Ayurveda classifies tejpatta as deepana-pachana (digestive stimulant). Traditional uses include: added to warm water for mild digestion support, infused in tea for respiratory ease, and used in traditional post-meal cleansers.
FAQ
Can I substitute European bay for Indian bay? Not ideally — the flavours are different. If you must substitute, use less (half quantity) and expect a different aroma profile.
How many bay leaves in 50g? Approximately 40-50 whole leaves, depending on leaf size. Enough for 20-25 biryani preparations.
Do I eat the leaf? No — bay leaf flavours the dish but is too tough/fibrous to chew. Always remove before serving.
Can I grind bay leaf? Yes, for garam masala. Dry-roast first for 30 seconds, then grind in a spice mill. Use within 3 months.
