What are cinnamon rolls?

Cinnamon rolls are tightly curled quills of cinnamon bark, dried into scroll-shaped sticks. Our Kerala cinnamon rolls come from Cinnamomum verum (true cinnamon), the thin-barked, delicately flavoured variety — not the thicker, harsher Cassia (C. cassia) sold as “cinnamon” in some markets. In Malayalam this is Karuvapatta; in Hindi, Dalchini (दालचीनी).

True cinnamon vs Cassia — the key difference

• True cinnamon (ours): thin, brittle, multi-layered scroll · pale tan colour · delicate sweet aroma · low coumarin · safe for daily use

• Cassia: thick single-curl bark · dark reddish-brown · strong pungent flavour · high coumarin (can affect liver in large doses)

Most “cinnamon powder” in Indian supermarkets is actually Cassia. For daily use — chai, bakery, desserts — true cinnamon is the safer and more delicate choice.

Culinary uses

• Masala chai — a 1-inch piece per litre

• Biryani, pulao, korma, Mughlai dishes — whole pieces in oil tempering

• Garam masala blends

• Apple pie, cinnamon buns, pumpkin spice, French toast, oatmeal

• Hot chocolate, mulled wine, spiced coffee

• Kerala beef roast, chicken mapas, meen pollichathu

Health benefits

• Rich in antioxidants (cinnamaldehyde, eugenol)

• Traditionally used to support blood sugar regulation

• Anti-inflammatory and digestive aid

• Low coumarin content (true cinnamon) makes it safer for daily consumption than Cassia

How to use

Break off a 2-3 cm piece for each use. Add whole to simmering oil, water, or milk — true cinnamon releases its flavour slowly. For powder, grind fresh (true cinnamon is brittle and grinds easily in a spice grinder). Remove the piece before serving if preferred.

Frequently asked questions

Are these cinnamon rolls true cinnamon or Cassia?

These are true cinnamon (Cinnamomum verum) — the thin, multi-layered, delicately flavoured variety safe for daily use. Not the thicker, stronger Cassia sold in many Indian supermarkets.

What is cinnamon called in Hindi and Malayalam?

Hindi: Dalchini (दालचीनी). Malayalam: Karuvapatta or just Patta. Tamil: Pattai.

Can I use cinnamon rolls for powder?

Yes — true cinnamon is brittle and grinds easily. Snap a piece into small bits, grind in a spice grinder for 30 seconds. Use immediately for strongest aroma.

How much cinnamon should I use per day?

Culinary quantities (1/4 to 1/2 teaspoon ground, or a 1-inch stick in tea) are safe daily. Because this is true cinnamon (low coumarin), daily use is safer than Cassia.

Does cinnamon help with blood sugar?

Some studies suggest true cinnamon may help regulate post-meal blood sugar levels. It is not a treatment or replacement for medication — consult your doctor if you have diabetes.

How do I store cinnamon rolls?

Keep in an airtight glass jar, in a cool, dry cupboard away from direct sunlight. Properly stored, whole quills keep for 12-18 months.

What makes Kerala cinnamon special?

Kerala’s humid coastal climate and traditional bark-peeling method produce the most delicate, aromatic quills. Hand-rolled, sun-dried, and sorted before packing — no machine processing.
