What is Black Cardamom?
Black Cardamom (Amomum subulatum) — called Badi Elaichi (बड़ी इलायची) or Kali Elaichi in Hindi, Kattu Elakka in Malayalam — is a completely different spice from the green cardamom used in desserts. Grown in the eastern Himalayan foothills (Sikkim, Darjeeling, Nepal), the large walnut-sized pods are traditionally dried over wood fires, which gives them their signature smoky, menthol-cool, earthy aroma.
Black vs Green Cardamom — different spices, don’t swap
• Green cardamom (Elettaria cardamomum) — small, sweet, used in chai, payasam, desserts
• Black cardamom (Amomum subulatum) — large, smoky, used in savoury dishes, biryani, meat curries
They are different plants with different flavour profiles. Substituting one for the other will ruin the dish.
Where it’s essential
• North Indian meat curries — rogan josh, nihari, mutton korma
• Kashmiri cuisine — wazwan, dum aloo, haak
• Biryani — Hyderabadi and Awadhi styles
• Garam masala — a core ingredient for depth and warmth
• Lentil dishes — dal makhani, rajma
• Pickling spice, stocks, broths
How to use
Always add whole pods to hot oil or ghee at the tempering stage — crushing before adding releases more aroma. 1-2 pods per curry (serves 4), 3-4 for biryani (serves 6). Remove pods before serving if preferred (traditional diners leave them in and simply push them aside).
Health benefits
Black cardamom contains cineole and alpha-terpineol. Traditionally used to:
• Aid digestion after heavy meat meals
• Soothe cough and respiratory discomfort
• Act as a natural warming spice in cold weather
• Refresh breath (seeds chewed after meals)

Frequently asked questions
What is black cardamom called in Hindi?
Badi Elaichi (बड़ी इलायची — “big cardamom”) or Kali Elaichi (black cardamom). In Malayalam, Kattu Elakka.
Can I use black cardamom instead of green?
No — black cardamom has a smoky, savoury flavour unsuitable for desserts and chai. Green cardamom is sweet and delicate. They are not interchangeable.
How many black cardamom pods per biryani?
For biryani serving 4-6 people: 2-3 whole pods crushed and added to the oil/ghee at the start of tempering. Leave them in the pot — guests push them aside.
Why is black cardamom smoky?
The pods are traditionally dried over wood fires in the eastern Himalayas. This slow smoke-drying imparts the signature smoky-earthy aroma that no other spice can replicate.
Is black cardamom healthy?
Yes — it contains cineole and antioxidants. Traditionally used for digestion, respiratory wellness, and as a warming winter spice. Use in culinary quantities only.
How do I know if black cardamom is good quality?
Good pods are large (3-4 cm), firm, deeply wrinkled dark brown, and have a strong smoky-menthol aroma when crushed. Avoid pale, brittle, or mild-smelling pods.
How long does black cardamom last?
Whole pods stay aromatic for 12-18 months in an airtight container away from heat and direct sunlight.
