What is Shahjeera?

Shahjeera (Bunium persicum) — literally “royal cumin” in Persian — is a cousin of regular cumin but a distinctly different spice. The seeds are darker (almost black), thinner, more curved, and far more intensely aromatic with notes of smoke, anise, and earth. Native to the Kashmir Valley and Central Asia, Shahjeera is the defining spice of Mughlai, Kashmiri wazwan, and Awadhi biryani traditions.

Shahjeera vs Regular Jeera — different spices

• Jeera / Cumin (Cuminum cyminum) — straight tan-brown seeds, mild earthy flavour, used in everyday cooking

• Shahjeera (Bunium persicum) — curved dark seeds, intense smoky-aniseed aroma, used in premium Mughlai dishes

Confusingly, “Kala Jeera” (black cumin) can refer to either Shahjeera OR Nigella seeds in different regions. Our product is Bunium persicum — the true Kashmiri royal cumin.

Where it’s essential

• Awadhi and Hyderabadi biryani (the thin dark seeds you see sprinkled on top)

• Kashmiri cuisine — rogan josh, yakhni, dum aloo, kahwa tea

• Mughlai korma, nihari, kebabs

• Premium garam masala blends

• Rich meat curries — the intensity cuts through cream and ghee

How to use

Shahjeera is more intense than regular cumin — use half the quantity. 1/2 to 1 tsp whole seeds in oil tempering for a serves-4 dish. Dry-roast lightly before grinding for maximum aroma. Never substitute regular jeera for shahjeera in a traditional biryani — the flavour will be wrong.

Health benefits

• Aids digestion and reduces bloating

• Rich in iron and essential oils

• Traditionally used for respiratory and digestive support in Unani medicine

• Natural source of antioxidants

Frequently asked questions

Is Shahjeera the same as Jeera?

No. They are different plants. Jeera is Cuminum cyminum — mild, light brown. Shahjeera is Bunium persicum — darker, thinner, much more intense, used in Mughlai cooking.

Is Shahjeera the same as Kalonji (black seed)?

No. Kalonji / Nigella seeds (Nigella sativa) are triangular, matte black, with a totally different oregano-like flavour. Shahjeera seeds are curved, dark brown, with an aniseed-smoky aroma.

How much Shahjeera in biryani?

For biryani serving 4-6 people: 1 teaspoon whole Shahjeera in the ghee at the start of tempering. Also sprinkle a pinch on top before the final dum (steam) step.

Can I use regular jeera instead of Shahjeera?

Not ideal for traditional biryani or Kashmiri cuisine — the flavour profile is completely different. In an emergency, use regular jeera but accept the dish will taste different.

What is Shahjeera called in Malayalam?

Shimai Jeerakam in Malayalam. In Hindi, Shahjeera (शाहजीरा) or Kala Jeera.

How do I store Shahjeera?

Whole seeds in an airtight glass jar, cool dry place, away from direct sunlight. Keeps for 12-18 months. Grind only what you need for immediate use.

Is Shahjeera more expensive than jeera?

Yes — Shahjeera is a specialty crop grown only at higher altitudes with lower yields. It is 3-5 times more expensive than regular cumin, which is why Mughlai cuisine uses it sparingly.
