What is Mace (Javitri)?

Mace — called Javitri (जावित्री) in Hindi, Jathipatri in Malayalam, and Jaipatri in some South Indian kitchens — is the red lace-like covering (aril) around the nutmeg seed (Myristica fragrans). When the ripe nutmeg fruit splits, this bright crimson aril is carefully peeled off, pressed flat, and sun-dried until it turns a warm orange-red colour. Mace and nutmeg come from the same fruit but are entirely different spices with different flavours.

Mace vs Nutmeg — the difference

Both are from the same tree, but:

• Nutmeg — the inner brown seed. Warm, sweet, slightly camphor-like. Earthier.

• Mace — the red covering around the seed. Sweeter, more delicate, slightly sharper. Preferred in Mughlai cooking because it adds flavour without darkening the dish.

Why Kerala Mace stands out

Kerala’s Idukki district is one of the main nutmeg-growing regions of India. Our mace is separated by hand from mature nutmeg fruit, sun-dried on open yards for 2-3 weeks, and hand-sorted for colour and shape. Whole-blade mace is always higher quality than broken or powdered — you can see the lace structure of each piece.

Culinary uses

• Mughlai biryani, nihari, korma — essential in the whole-spice tempering

• Kerala meat masalas (mutton, chicken, beef)

• Bakery — pound cake, apple cake, doughnuts, pumpkin pie, custard

• Bechamel sauce, cream-based sauces, pâté, sausages

• Garam masala, biryani masala, kebab masala blends

• Indian desserts — gajar halwa, kheer

How to use

Use 1-2 blades per dish for curries, 3-4 for biryani (serves 6). Add to hot oil at the tempering stage — mace releases its aroma within seconds. For powder, grind just before use (mace is harder than nutmeg so use a spice grinder, not a mortar). A little goes a long way.

Health benefits

Mace contains the same compounds as nutmeg (myristicin, elemicin) but in different proportions. Traditionally used to:

• Aid digestion

• Soothe nausea

• Freshen breath

• Support restful sleep (in small quantities)

Use in culinary quantities only — 1-2 blades per dish, maximum 1/4 tsp ground.

Frequently asked questions

What is mace called in Hindi and Malayalam?

Hindi: Javitri (जावित्री). Malayalam: Jathipatri. Tamil: Jaipatri. Both come from “Jathikka” (nutmeg) — the red lace around the seed.

Is mace the same as nutmeg?

No. Mace is the red aril (covering) and nutmeg is the inner seed, both from the same fruit. Mace has a sweeter, more delicate flavour — preferred in Mughlai and bakery cooking because it doesn’t darken the dish.

How much mace should I use in biryani?

For biryani serving 4-6 people: 2-3 whole blades in the ghee at the tempering stage. For stronger flavour, crumble the blades before adding.

Can I substitute nutmeg for mace?

Not ideal — mace is sweeter and lighter, nutmeg is earthier and darkens cream dishes. In a pinch, use 1/2 tsp nutmeg to replace 1 tsp mace, but the flavour will be different.

How do I grind whole mace blades?

Mace is fibrous and tougher than nutmeg. Use a spice grinder for 30-60 seconds. Mortar and pestle takes effort. Always grind fresh — ground mace loses aroma within 2-3 months.

How long does whole mace last?

Whole blades keep for 12-18 months in an airtight container. Store away from heat and direct sunlight.

Is mace safe for pregnancy?

Culinary quantities are generally considered safe. Avoid medicinal or heavy doses during pregnancy without medical advice.
