What is Nutmeg (Jayfal)?
Nutmeg (Myristica fragrans) is the inner seed of the tropical nutmeg fruit, called Jayfal or Jaiphal in Hindi and Jathikka in Malayalam. The outer lace-like red covering is dried separately and sold as mace (javitri / jathipatri). Kerala’s Idukki region, with its humid highland climate, is one of India’s main nutmeg-producing areas.
Why Kerala Nutmeg stands out
Kerala nutmeg is harvested only when fully ripe — the outer fruit splits naturally to reveal the dark brown seed. Each seed is separated from its mace by hand, sun-dried for 2–3 weeks until the kernel rattles inside the shell, then shelled. This slow process preserves the full volatile oil content (6–15%) that gives nutmeg its warm, sweet, slightly sharp aroma.
Culinary uses
• Freshly grated into milk-based desserts — payasam, kheer, custard, rice pudding
• In meat masalas — biryani, nihari, mutton curries, kebabs
• In bakery — cakes, cookies, apple pie, pumpkin pie, gingerbread, French toast
• In warm drinks — masala chai, hot chocolate, mulled wine, eggnog
• In vegetable gratins and cream-based sauces
• In Kerala appam batter, egg roasts, and traditional sweets
Health benefits
Nutmeg contains myristicin, elemicin, manganese, magnesium, and copper. Traditionally used in Ayurveda and Unani medicine to:
• Aid digestion and relieve bloating
• Support restful sleep (small pinch warm milk is a classical remedy)
• Provide natural warming during cold weather
• Soothe toothache (classical oil application)
Use in culinary quantities only — a pinch to 1/4 tsp per recipe. Large doses (over 5 g) can cause side effects.
How to use whole nutmeg
Grate the whole seed fresh over your dish just before serving — ground nutmeg loses aroma within weeks, whole nutmeg stays fresh for 1–2 years. Use a dedicated nutmeg grater or the finest side of a box grater. A single seed yields 10–12 uses.

Frequently asked questions
What is nutmeg called in Hindi and Malayalam?
In Hindi it is Jayfal or Jaiphal (जायफल); in Malayalam it is Jathikka. The red lacy covering sold as “mace” is Javitri in Hindi and Jathipatri in Malayalam.
How much nutmeg is safe per day?
In cooking, 1/8 to 1/4 teaspoon of grated nutmeg per serving is plenty. Daily culinary use is safe. Avoid doses above 5 g at a time — large amounts can cause nausea and dizziness.
What is the difference between nutmeg and mace?
Both come from the same fruit. Nutmeg is the inner brown seed; mace is the bright red lacy covering around the seed. Mace has a more delicate, slightly sharper flavour; nutmeg is warmer and richer.
Can nutmeg help with sleep?
A traditional Ayurvedic remedy is a pinch of grated nutmeg in warm milk before bed. Small culinary doses may promote calmness, but nutmeg is not a replacement for medical treatment of sleep disorders.
How do I grate whole nutmeg?
Use a dedicated nutmeg grater (small, cylindrical, with fine holes) or the finest side of a box grater. Grate directly over the dish, as the aroma fades within minutes once released.
How long does whole nutmeg last?
Whole nutmeg seeds retain their aroma for 12–24 months when stored in an airtight container away from heat and sunlight. Pre-ground nutmeg loses aroma within 3 months.
Is nutmeg safe during pregnancy?
Culinary quantities (a pinch in food) are generally considered safe. Avoid medicinal doses or nutmeg-heavy preparations during pregnancy and consult your doctor.
